So, I have the same CPU and memory, similar GPU but an ITX motherboard from Gigabyte (B650I)
So far so great, it’s working without a hitch
And it’s not only snappy, with the Noctua coolers it’s very quiet, even with demanding titles the system stays quite quiet
A native app, nice
I’ve been using Nobara for some time now, and I’ve been successfully able to play on Nvidia & Wayland, so that’s quite a feat in itself. Also, everything is setup at install time, so you don’t have to setup many things yourself.

I think the most MacOS-like look is GNOME with Dash-to-Dock extension, at least for me
Just chipping in to say I have a 3060 and I’m scared of every update breaking my drivers again - just don’t get a Nvidia, don’t do it to yourself
I can recommend Keychron M3, it’s really a steal for its price. Been using it since the release day for Mac, Windows and Linux and I had zero issues
You could try ViaMichelin Not saying it doesn’t track you, but atleast it’s not Google
